All these headstones are of a similar shape and size. It's a shape seen in other D&G churchyards but I wonder if its use here is linked to the Abbey being behind the burial ground? The shape looks similar to some of the arches in the Abbey.

Could be, but there are also plenty in other styles - I think it more likely that it is just a local tradition, or perhaps the preference and recommendation of the local monumental mason.
